Mushroom Quiche - For brunch, meal prepped lunch or anytime of day, nothing beats a quiche!
How to Use Your Greens! - This time of year, I have to do a lot of mixing and matching from different farms to meet the number of items we need to send out and often have to use an umbrella term like "Greens" because a few different kinds are being sent out so that everyone can get them as quantities available are very limited.
Marinate Mushrooms - Awesome to have on hand for antipasti, on some crostini with micro greens on top or mixed with some mesclun, vinaigrette and a soft boiled egg.
Salmon With Warm Lentils - Roll with me here. First off, arctic char is very similar to salmon in its fat content but has a more mild flavor, a little closer to trout. Thus, we will often use arctic char as a salmon replacement. Second, I can't find the exact recipe but it's a combo of this lentil recipe and the cooking technique in this salmon recipe. It's amazing.
Chorizo Hash and Eggs - If you were like me and devoured all of last week's delicious tortillas already, check out this dinner/breakfast. If not, refer back to last week's recipe for chorizo and potato tacos.
Grilled Skirt Steak with Pesto Butter - Skirt steak is one of my favs. It's super beefy, easy and quick to cook, is a great pallet for other flavors and, when cut across the grain, is pretty dang tender. Here's one of many great ways to cook.
Seared Bok Choy - With a super hot pan at the ready, you'll have this delicious side for dinner ready in no time! Serve with Crispy Tofu, or Chicken Breast or Leg Quarters, or Calamari.
Sausage and Fish One-Pot - Sausage is amazing. It's its own thing but also a stellar ingredient that adds a ton of flavor to other dishes. This with some crusty bread. Uh-huh.
