Ground Beef and Potatoes - Comforting ground beef and mushrooms on top of a bed of mashed potatoes, what more could you want from a dinner?
Beef Casserole - Although I am super excited for spring, I wouldn't mind curling up with this casserole on a rainy April day one more time :)
Beef Rib Stroganoff - We're setting you up for some tasty stroganoff this week and this is the recipe we'll be using with those beef ribs.
Greek Beef and Onion Stew - Although today is supposed to be really warm and I am so excited for spring, I am still also excited to have at least one more wintery stew to feel like you're curled up in a blanket while enjoying!
Baked Rigatoni with Beef - Whenever we have baked pasta in this house, with the leftovers, we just leave a fork in the dish when it's in the fridge cuz we know we're gonna be sneaking bites till it's gone.
Beef and Radish Soup - Maangchi! Like lots of folks, this household got obsessed with Maangchi during the pandemic. She rules. Great use of the shaved beef and the purple bravo radish (which is a fancy daikon) in this classic Korean soup. (Pickle some of the daikon and/or carrots for a crunchy, cool banchan to serve alongside.)
Beef and Cabbage Stir Fry - Another great weeknight meal that comes together super quickly.
Beef Larb - Larb (usually made with pork or chicken so feel free to sub) is easy to make and super refreshing. The ground toasted rice is an amazing textural element. And using Bibb or other lettuce as a little wrap is an easy way to get from plate to palate.
