Smashed Sunchokes - For reasons beyond me, sunchokes are also called Jerusalem artichokes. They're a little nuttier and sweeter than fingerling but can be treated in many of the same ways.
SUNCHOKES three ways! - Sunchokes or Jerusalem Artichokes are a native food to the US! (It is actually the root of a perennial sunflower!)
Roasted Sunchokes - They may look odd but these roots are delicious and might just be your next favorite thing. Slice them thinner and you can get yourself a sunchoke chip too!
