The Root of Winter Variety

Hello Friends!

Between podcasts and music, I'm often tuned to MPBN and get little jolts of delight when I hear about folks we know and work with. This past week, a story was aired about aquaculture in New England that featured Springworks Farm, who have been helping to keep our diets a bit less beet-y and turnip-y for the last few months. They take advantage of “fish and plants working together to help each other grow in a natural ecosystem where water circulates in an endless loop”. Last year, they produced "around 2 million heads of organic lettuce every year and up to 200,000 pounds of tilapia". And, counterintuitively, compared to land-based agriculture, aquaponics actually requires less water.

As we careen into spring, it's worth acknowledging how much we rely on operations like Springworks Farm to get us a bit more variety during the winter months. And, the story is a great reminder of the environmental importance of having access to locally grown food, regardless of how it's grown. It's a win/win: fewer miles between farm and plate not only reduces greenhouse gas emissions but fresher means tastier and healthier. Score.

Garlic Butter Salmon Potatoes and Chard: Ok fine, so the recipe calls for asparagus but it isn't in season (just yet! hold yer horses!)

Swiss Chard with Garbanzo Beans: Time for meal prep, folks! Keep this guy in the fridge and add hard boiled eggs, or some left over salmon for a quick and healthy lunch.

Lazy Shepard's Pie: Ground beef, all your veggies, a quick gravy and mashed potatoes. I know its getting toasty out but this simple idea is flexible and delicious. Enjoy!

Recipes (ME + NH)

Apple Pancake - These EverCrisp apples are seriously sweet. Perfect pancake fodder for those with such breakfast cravings.

Red Flannel Hash - Great use of those beets and cabbage that have been chilling in the crisper. Wanna start the day off right? This'll do.

Cinnamon Oatmeal Cream Cheese Bars - Flavorful oatmeal crisp topping is a fav. Rich, velvety and sweet cream cheese filling is a fav. Yes please.

Monkfish Wrapped in Rosemary, Lemon and Parma Ham - I guess we can't do sweet and breakfast all the time, huh? Well... This sounds dang delightful. Monkfish and ham? Quite a dynamic duo.

Oven-Fried Chicken Wings - For real, these are serious business in ways no "oven-fried" food has the right to be. A weekend lunch staple if we don't have it in us to make it over to Samuel's for some dirty wings and 1¢ mimosas.
