Just a quick note that Family Dinner has again been invited to present at a TedX Natick Event - we're so excited to return! This event is being held at The Center for the Arts in Natick on Thursday April 13th at 7:00.

Something Brewing...

At the core of Family Dinner is the mission to use technology and data to help eliminate food waste. Fun Fact: Did you know that between 30- 40% of food that is produced in the US is wasted. That adds up to the tune of between 125- 160 BILLION pounds a year. (Correction: That's not fun in the slightest)

We created Family Dinner to combat that in our own little way while supporting and elevating the work of small local farmers and producers.

And we love working with folks who share the vision and who are hell bent on making a change.

Enter, Kyle Fiasconaro, chef and owner of Brewer's Foods, an Up-Cycled baking company driven to reduce food waste in the craft brewing industry. He's pictured here in front of Magic Bites, one of Family Dinner's favorite purveyors.

We have known and loved Kyle for years - he is a gem of a human.

( In the early days, we were short on product once, I called Kyle panicked - could he save the day? He was away on vacation but allowed me to go to his house, find the hidden key, break in and stock up. It was quite the scene. I could practically see the headlines "large, local woman in faded overalls seen absconding with upcycled crackers from Somerville home")

Here's Kyle's story:

"Ever since I was a young boy I have felt most comfortable in the kitchen. My father owned a bagel store so I grew up in and around the food industry. Eventually I followed this path and became a cook and forager, working in some of the country's top farm to table restaurants and dedicating myself to local food.

Having been in the food and beverage industry for years, I befriended brewers from around the country. I found that we all had one common struggle; food waste. We all hated wasting product.

When biking to work one day in Brooklyn, New York, I witnessed thousands of pounds of spent brewers grains from a local brewery being thrown out, right outside of an adjacent bakery. The smell of the fresh grains and the bakery next door led me to wrack my mind for what could be done to ”Eat” that beer. What started out as a small project grew into a mission."

Chicken Sausage and Rice Skillet - We have three flavors of sausage from Tide Mill and they all could be coaxed into this simple dish that will stay strong in the fridge for days.

Cress Salad - Cress is an early spring green, bright and peppery. Make a quick salad to serve along side a grilled white fish or even your grilled Chicken sauage.

Mushroom Pizza- Have a freezer full of pizza dough? Go haul one out (go now! I'll wait....) and let it defrost. Grab and onion, your mushrooms and sautee them up in butter. Any herbs or greens you have on hand and lunch is ready.

Recipes (ME + NH)

This week's offerings really have me feeling the beginning of spring in a major way. Arugula, halibut, spinach, maple syrup (sorry I missed that one last week for Maine Maple Sunday!). In fact, it's 54º as I write this and yes, the windows are open.

Chicken with Mushroom and Polenta - Creamy, satisfying, homey goodness, right here. And this cornmeal from Fairwinds is so good.

Skate Wing Schnitzel - Here's a fun little tweak to a couple of classics. I like the last line: "Drizzle skate with brown butter sauce and serve with lemon wedges, if desired." Why yes... I do desire.

Arugula, Pear & Blue Cheese Salad with Warm Vinaigrette - Classic. Want a cheat code to level up? Warm bacon vinaigrette... if desired.

Pork Larb - My larb love is large. Want a vegetarian version? This looks delicious.

Blackberry Bourbon Fool - I had no idea that fool was a thing (as a food, of course... plenty of fools out there) till I read this Christine Burns Rudalevige article in this past Sunday's Press Herald. This version sounds especially tasty with some maple syrup and bourbon to liven things up. 🥃
