Diggin' Spring

Good Morning!

This week we want to highlight an unsuspecting starlet in the veggie line up. Annually, spring dug parsnips pop onto stage in this liminal phase between winter and spring, telling us not to fear, that spring is on its way.

(And yea. I'm totally aware that "not to fear" is an absolute absurdity. Like "there's nothing to worry about" and "you should calm down". Those phrases have an intention that is almost always the opposite of their consequence.)

But it's true! The goldfinch, crocus and daffodils abound! Spring is indeed on its way and spring dug parsnips are here to announce its arrival.

These guys are planted last fall and allowed to slumber peacefully in the ground over the winter freeze. This Sleeping Beauty of the root vegetable kingdom has its starches turn to sugar in the cold temps. This makes for a beautifully sugary and spicy end product. Still ready for roasting, or a simple sauté, let them light up your mood and your plate this week.

Thanks to the folks at Fairwinds Farm in Bowdoinham, ME and Brookford Farm in Canterbury, NH for these spring dug gems. Enjoy!

Recipes (MA)

Beef Stew: Take the Beef and let it defrost. It's time for the last beef stew of the season. Add some parsnips, some onions you have lying around settle into a bowl of delicious.

Fish Soup: While we are talking about stew, how about a bright fish stew? You could also haul some of the other fish (flounder?) out of your freezer for a a heartier, fishier soup.

Parsnip Puree: This will be nice and sweet, you can skip the garlic in any recipe and just add another (and another?) pat of butter.

Brownies from Forge: Pour a small glass of whiskey and enjoy in silence.

Skirt Steak With Mushroom-Cream Pan Sauce Recipe - Beef and mushrooms and cream. *chef's kiss*

Garlicky Sauteed Baby Kale - Would be a perfect side for that creamy, mushroomy skirt steak, ya know? I believe it was Agent Dale Cooper who said, "Nothing beats the taste sensation when the cream sauce collides with garlicky sautéed baby kale." Or something like that.

Chickpea Coconut Curry With Wilted Greens - Sub the spinach for the amazingly juicy purple mustard greens from Dandelion Spring and you've got yourself a super flavorful and healthy meal.
