Cook Book Club

In lots of kitchens a tower of cookbooks leans against a coffeemaker, or sits side by side like soldiers on a shelf. If your kitchen is anything like ours - that collection is a spectrum of popularity. Some are dog-eared and covered in gravy, bacon grease and the remnants of one perfect Negroni. Others have unbroken spines, their culinary wisdom having never seen the light of day.

As seasons shift we wanted to share with you a couple of our favorites that keep us feeling inspired as the weather changes scenes.

GM, Family Dinner Maine and Seacoast, NH

My wife, Krista, has a seriously over the top love of cookbooks. I love them too but her adoration is, at least in my experience, unparalleled. Between the two of us (mainly her), we've got more than any two people should have but, for us, it's not just about cooking food so you can jam calories into your body. They're at the totally bizarre crossroads of instruction manual, food writing, picture book, and travel writing. And when done well, written by someone with a distinct perspective, they're kinda transformative.

In that vein, I'm going to pick one that yes, is a manual of sorts, but contains almost zero recipes we'll ever produce. And that's fine. Written by Francis Mallmann, Seven Fires' ability to be so evocative of a place and its food inspires me to want to cook and eat delicious things.

Joshua McFadden's "Six Seasons: A New Way with Vegetables" is full of brilliant takes on what to do with seasonal veggies.

He writes in the forward: " My goal in writing this book was to encourage and energize cooks of all skill levels - that means you-- in your efforts at seasonal and local eating. Cherish the vegetables when they're at their best, and then wait until their season rolls around again. The impact will be profound, in your own kitchen and in the community at large."

Heck yes Josh, you're hired.

I'm excited about his take on greens with new potatoes, eggs and bacon vinaigrette, Bitter Greens Salad with Melted Cheese (SALAD CAN HAVE MELTED CHEESE?? THIS CHANGES THE LAWS OF GRAVITY) and Potato and Roasted Cauliflower Salad with Arugula.

If you don't have it already, give this book a go. Local Bookshops such as Porter Square books are dying to send it to ya.

Recipes (ME + NH)

Chicken Adobo - One of the tastiest outcomes of one of the easiest recipes. Pure alchemy.

Miso-Marinated Black Cod - I'm being self-indulgent here. Black cod, aka sablefish, is an insanely delicious piece of fish that I haven't had in forever so, when I saw some was available at Harbor this week, I had to pull the trigger. It's tender, flaky and remarkably buttery. It has a seriously high fat content (watch out for flare-ups if you're grilling!) but somehow evades being overly fishy. This recipe is a doozy. Remarkably simple and so dang tasty.

Czech Stuffed Chard Rolls with Ground Geef and Rice - Well shoot. This sounds delicious and is a great additional way to move through that chard.

Yotam Ottolenghi’s Celeriac Steaks with Café de Paris Sauce - Awesome fancy pants Sunday roast but vegetarian. Would be lovely nestled up against some roasted green veg.

Melting Napa Cabbage - We've done an iteration of this once or twice. And I know this is getting repetative but, once again, this recipe's sum is more than just its parts.
