Mustard Greens

This week we have mustard greens in shares from Clark Farm and Dandelion Spring. These greens are, in the parlance of our times, wicked good for you - loaded with vitamins and antioxidants.

You can eat the more delicate leaves raw, they have a mighty peppery and horseradishy zing to them. Most recipes will have you cook them down a bit and serve as a side dish. I love cooking them down, marrying with fresh pasta and blanketing the whole thing in fresh parm and even more fresh ground pepper.

These beautiful verdant bunches are again a bird song of spring, even if it's barely 50 degrees out. If you don't plan to use them right away, wrap the bottom in a damp paper towel and store in plastic.

Mustard Greens with Pasta: It calls for sausage here - you can go wild or leave it out. The dish will have plenty of flavor. Maybe swirl in some ricotta if you got the Cheese of the Week.

Salmon with Baba Ganoush: Oh heck yes. This is going to be delicious.

Roasted Radish: I think this might have a place at your brunch table, something with a bit of kick to cut through the fat of eggs and cheese.

Whipped Ricotta on Toast: So you got the Cheese of the Week. Take a moment to slice a nice piece of bread and slather that heavenly cheese on. A drizzle of honey, some salt. One of life's simplest pleasures.

Simple Southern Mustard Greens With Bacon Sesame Sriracha Sausage - Simple, slow cooked mustard greens are an great palette for flavor. Especially porky flavor. The amazing sesame sriracha sausages from Colvard would be a great substitute (or addition) to the bacon here. They caramelize like a dream and will spice the dish up wonderfully.

Hot Ukrainian Borscht Recipe - This is a very maximalist recipe that would be a very soothing Sun. cooking project. Could definitely pare down on the meat. We generally just use short ribs, similar to here. Or go vegetarian thusly.

Roasted Garlic Butter Fingerling Potatoes - These are delicious. Serve alongside just about any protein+veg combo.

Beet And Apple Salad With Apple Cider Vinaigrette - Would absolutely throw in a couple hard boiled eggs on the side here. And bacon.

Caramelized Rutabaga Layer Cake With Caramel-Cream Cheese Icing - This is not a joke. Read on and become a true believer in the power of root veg and Yankee ingenuity.
