Garlic Scapes
Can’t ‘scape ‘em this time of year!
Shannon here to talk about one of my favorite early summer delicacies and our newest seasonal veggie add-on, Garlic Scapes!
What exactly are these curly, serpentine-looking veggies? The simple answer is that they are the early stages of where flowers come from to produce seeds. There are two ways that garlic propagates (to make more plants)–through either seeds or cloves. Plants only have so much energy–they can put that energy towards either making seeds or bulb development. Therefore, if you want to enjoy those delicious garlic cloves with your winter stews, pasta sauces, chicken, tofu, steak, fish (I think you get the point…), you can probably see why it’s important that the scapes get the snip. (Plus, we get two ways to enjoy all of the garlicky goodness–win/win!)
Thankfully, these scapes lend the same aromatic garlic flavor as their clove counterparts. One of my absolute favorite things to make every year is garlic scape pesto. Add the pesto to pasta, chicken, risottos, mayo for sammies *Chef’s Kiss*! Delicious. You can also turn them into a compound butter, pickle them, sauté them in butter, and grill them.
Since taking away scapes is crucial for garlic bulb development, I’ve had no less than five farms call me this week asking to help move their scape crops! We’ll be able to get them into your shares (in MA this week and ME/NH next), but we also wanted to take this opportunity for y’all to buy more for any of your cooking fancies, projects (scape butter sounds like a fantastic gift, just saying…), or ambitions! Roasted Cod with Wilted Kale - SPRING IS SPRINGING. There's a plethora of amazing seasonal veg that you could cook and toss in with the wilted kale here.
Steak and Spring Vegetable Stir-Fry - For those getting the shaved steak, a chunk of the work is done for you here. Could/would definitely throw in some additional veg here, too.
Hakurei Turnip on Soba Noodles - This is the dish that we jump on as soon as Hakurei turnips come into season. Hakurei are smaller and less starchy than their behemoth cousins you've been seeing over the winter, and are not only super tasty, but easier to work with. And their tops are a bonus ingredient that's easily prepared.
Baked Asparagus Frittata - Frittatas are a staple in this household. They're amazing for getting the last bits of all sorts of stuff out of the fridge and are delicious. Become friends with the frittata.
Gravlax - Yeah... Gravlax at home. It's super easy and you're now the type of home cook that cures meat.
Strawberry Pancakes - That's all. Strawberry pancakes. Do it.
Strawberry Rhubarb Crisp - Delicious spring dessert that is super easy. Would not say no to some ice cream accompaniment.
