Doctor's Orders.

Despite the recent merciful bursts of sunshine, these have been some dreary days. Maybe you're feeling a bit run-down or a tad overwhelmed. Maybe we are all at that point in winter where we most resemble that small pile of snow that refuses to melt in the Target parking lot. We're a bit gritty, a bit grey but somehow still stubbornly resilient.

With my advanced medical degrees (all imaginary) I would like to offer a three point prescription. My wisdom tells me that we all need some elastic waist pants, Season 3 of White Lotus and homemade hamburger helper from the New York Times, pictured.

Priya Krisha's dish is wildly comforting, creamy and easy to make. Though made to resemble its namesake, it has none of the horrifying ingredients (I see you, ferrous sulfate!).

It's all made in one pot and the key is tearing some pieces of American Cheese in at the end. And the haters in the back are probably decrying the notion that American Cheese is not itself a horrifying ingredient but I have neither the time nor the energy to care. That shit is delicious. (White cheese only. The orange kind is scary. Especially in the current political climate.)

We have ground beef from Cold Spring ranch you can use here. Though I've never given it a go I think our vegetarian pals might try it out with tofu or tempeh to skip the beefiness.

So, roll up your sleeves and pull on the sweatpants. Doctor's orders.

Grilled Cod Foil Packets with Vegetables - Oh... you're one of those weirdoes already rocking shorts and have been grilling all winter? We see you... (And this is also easy to just do in the oven for the rest of you.)

Stuffed Tetsukabuto, Comté, Mushrooms and Greens - Man... this looks like a total barn burner of a dish. Visually stunning, big flavors. And don't let the litany of ingredients scare you off; the preparation is pretty straight forward for how extravagant it looks.
