Puttin' on the Ritz.

This week we have fresh haddock coming your way from Red's Best. Fish this fresh can stand into any dish your heart desires; maybe a fish curry or creamy chowder. Delicious as those are, I only have eyes for baked haddock and all of its buttery, crunchy splendor. Though the fish is divine, a sleeve of Ritz crackers is the real MVP.

You can be a good doobie and follow the recipe to the letter. Or you can be like me smash up far more Ritz into inordinate amounts of melted butter than the recipe calls for. It's a quick rewarding weekend dish.

Speaking of Ritz crackers, maybe you are asking yourself, as I did, the next natural question:

Is there a significant historical connection between Nabisco's iconic cracker and the Ritz-Carlton hotels, founded by Swiss hotelier César Ritz in 1902?

You'll be pleased to know that yes.Yes there is.

In the early part of the 20th century the term "ritz" and "ritzy" came to symbolize luxury, borrowing the term from the hotel brand. The cracker was created in 1934 to give people "a taste of the good life" at an affordable price. It's also the vibe the band "Taco" was going for in the 1983 classic "Puttin' on the Ritz" which is just about the strangest and creepiest music video one could imagine, even by the deeply low standards of the 1980's.

And before your curiosity gets out of hand, let me share that the seven, yes seven, holes aren't there just to look pretty. Their function was to release steam in the baking process allowing the puffy airy crunchy combo that is so pleasing. So pleasing in fact that they became the best-selling cracker in the world just three years after their debut.

And no, I don't know who was the first alchemist genius to smash them up, drown them in butter and throw it on some fresh fish. I'll assume it was someone's Grammie in Gloucester, MA. And if that is indeed true, we are all indebted to you, Grams. Thanks for the ritzy dish.

Recipes

Pan-Fried Fish Sandwich - I live in Portland, ME and J's Oyster is one of our fav hangs (but please don't go... more bar stools for us). One of the many reasons is because of how much they do without having a fryer on premise. For instance, their pan fried haddock sandwich. I've been trying to find the exact recipe for awhile but this gets you pretty close. And is super easy to make at home AND YOU DON'T HAVE TO DEEP FRY!

New England Fish Chowder - You want this. Trust me.

Smashed Sunchokes With Thyme-Butter - People are afraid of sunchokes, aka Jerusalem artichokes. I understand. They look weird and unfamiliar and folks aren't really sure what to do with them. Which is too bad because they're super tasty (think nutty potato) and pretty versatile (starchy, can be prepped in a number of ways). Try this and either become a convert or you can swear them off forever.

Or, if you wanna get your deep fry on, try these sun choke chips and use that tasty sour cream from Side Hill Farm as the base of your dip.
