Nerding out with Clark Farm

Nerding out at the farm.

Joe and I have been working with the incredible team at Clark Farm (above, check out the Fam Din gear on Andrew!) to do crop planning for the season.

In this process Andrew and Mary Liz spell out the next 6 months and what their farm can grow and how much. Arugula in May, broccolini and peas in July, herbs galore in August - you get the point.

Joe and I then go shopping, we pick out certain items, at a promised volume month by month. Next week we will share that list back to them and Andrew, Amanda and Mary Liz can start the delicate process of seeding each little guy planted directly for Family Dinner in its cocoon of organic dirt. It will hang tight in the warmth of the greenhouse 'till its time for planting, harvesting and tucking into your Family Dinner bags. Which all sounds sort of lovely. I wanna hang out in a cocoon of warm dirt. Are there snacks?

This process is beneficial to the farm because they buy seeds, plant and harvest to meet a guaranteed demand. It takes out some of the uncertainty and guesswork, and it builds a true partnership. These folks have been with us since the damn beginning and its a honor to keep building this alongside them.

And from Andrew's perspective: "Speculative farming, where you are guessing what to plant and guessing what you sell is really hard. It has driven a lot of farms into really difficult situations. Contract farming, like what we do with our CSA and what we're doing with Family Dinner is so much more efficient. It takes the volatility out and is beneficial to everyone. Plus Erin's jokes are absolutely stellar.***"

*Andrew did not, and never will, say that last sentence.

Recipes

This week it's all about the ginger for me. (this is Erin.) Due to objective and inherent laziness, I like to freeze fresh ginger once I peel it. That way you have little nubs of it that you can grate into dishes and not have to worry about peeling those awkward pieces over and over and lobbing off a digit. Here's a video.

Sweet Potato Soup: This week we have sweet potatoes and apples in all shares. Mix in some frozen butternut squash and grated ginger and you have yourself lunch for the week.

Ginger Garlic chicken: You can use thighs or breasts or wings, just careful on the temps.

Veggie Burger fried rice: We have ginger sesame veggie burgers this week for our vegetarians and that had me thinking fried rice. I'm going to make a basic fried rice with all my onions and wilty greens in the "crisper" and then crumble the veggie burgers in for some protein. The recipe is just for a guide. Add in whatever tickles your fancy.
