In the 2018 Blockbuster A Star is Born, Bradley Cooper and Lady Gaga introduced us, via song, to the merits of rendered beef fat, also known as tallow.

The lead song from the film is belted out in perfect harmony, "In the tallow, taa aa low, in the ta ta ta taaaalooow", by two impossibly attractive people who have no business being together, never mind singing about beef fat.

(And no. I will not apologize for that heinous dad joke, nor for getting that song jammed in your brain all day long.)

If for some reason you are still reading this, we have smoked tallow in the store, folks!! This tallow is made by our friends at the Rusty Can from our grass fed beef from Cold Spring Ranch. Sully, the owner of Rusty Can, smoked it down for days, giving it an incredible richness and taste.

Using tallow a hot pan makes the most delicious potatoes imaginable and makes roast veggies something worth looking forward to. And I also won't apologize for mopping up that pan with some crusty bread to waste zero of that deliciousness.

Sully packed them up for us in 8oz containers but a little goes a long way.

May I suggest bathing one of our amazing Grass Fed Rib Eye or Porterhouse steaks in it? We just got a new shipment in so your March could get a whole lot meatier. Steaks abound!

Root Vegetables with Spicy Italian Sausages - We have some friends who will throw together a grain and/or some veg, some sort of protein, a touch of this spice, a bit of that herb, maybe a vinaigrette or some other condiment. Whatever is on hand. They call it, lovingly, Pile of Crap. And this is a great late winter take on it. (And super riffable but just be sure to cut the veg to the appropriate size so they finish cooking at roughly the same time.)

Tempeh Bacon BLT - One of the best impromptu lunches to ever exist.

Winter Vegetable Soup With Turnips, Carrots, Potatoes and Leeks - One of the best impromptu dinners to ever exist. And, like the Pile of Crap, throw in whatever you've got kicking around. And let's not be so fussy that you're pulling out the food mill; a blender is perfectly fine. If you're not vegetarian, rendering a bit of bacon or pancetta at the beginning and then garnishing with the lardons is where it's at.
