Bacon. Yes, Bacon.

Come closer. Yes, you. Closer. I have something I want to whisper in your ear.

"It's bacon week."

If those are not the three most titillating words you have ever heard, I'm not sure what you tell you. Few meats invite such unbridled giddiness and pleasure as expertly cooked, perfectly crisp bacon. The smell of it fills the house with the distinct aroma of happiness, and poor Frank the Dog (pictured) starts running amok like she's been sniffing glue. (Way better than those candles Gwyneth Paltrow has been hawking.)

This week's bacon comes from Shawn and his family at The Farmhouse Meats in Pembroke, MA. They started this company out of a deep respect for animals, the land and bringing their customers the highest quality product they can. Neat idea, sound familiar? Martyr that I am, I did some extensive product testing and can confirm that this bacon is indeed stellar.

There are myriad schools of thought on the proper way to cook bacon. There are the committed stove top folks and the air fryer groupies. And while everyone is entitled to their own foolish culinary opinions, the definitive best way to cook bacon is in the oven. 425 for 16 minutes. Joe swears by parchment paper as a base for the bacon but I prefer a silicon mat like a Silpat. The bacon comes out perfectly each and every dang time. And in the name of all that is holy, do not throw away the bacon fat.

Also we have frozen corn from the Head Water Food Hub. We wanted to include this this week to brighten up your food horizons, which may be clouded by root veggies this time of year. I'm thinking a corn chowder with some bacon crumbles or some corn fritters so I can fool myself into thinking its summer. A cold beer might help....

Recipes

Mexican Street Corn Salad (Esquites) - Erin kinda stole my thunder with the corn recipes but let's do one more. It's one of my favorite things and, being heavily bearded, is a bit easier to consume than the on-the-cob street food version. This screams summer and screams for a margarita and screams for tacos.

Chef John's Boston Baked Beans - Coupla things about this one here. First, yellow eyed beans are excellent for baked beans (so sub the navy beans here with those lovely yellow eyes). Throw in some hotdogs and serve alongside some brown bread, and you're sitting pretty. After all, you are the Jackie McLean of your jazzy baked beans. Second, Chef John is a national treasure and you should watch, and be delighted by, all of his YouTube vids. And that Jackie McLean reference will make sense.

Any Recipe With Seriously Charred Cabbage - Cabbage is so dang versatile. It bums me out that people don't like it. From fermenting into sauerkraut to a garnish for tacos to coleslaw, it's super versatile. It's also very naturally sweet and you can cook that out if you char the hell out of it. I've never had charred cabbage that was too charred. Tahini-Smothered Charred Cabbage, Charred Cabbage with Ssamjang Butter... myriad options. Wannan see some more.
