When the Moon Hits your Eye

Little known fact, the next line in this classic Dean Martin love ditty is :

"When the stars make you drool 

Just like pasta e fasul, that's amore. "

Now I have to admit to not exactly being a sucker for love songs, but one that contains explicit references to pizza and pasta dishes can win this cold, dead heart over for sure.

Back to the point : This week in Massachusetts we have pizza dough from our friends at A&J King. And its not just any old dough (it never is!). Those crazy kids started milling their own flour to build the dough. 

From Andy King: 

"In July of 2022 we were able to realize a long-time goal of ours: to purchase and use a New American Stone Mill (Elmore, VT, founded 2015) to grind our own whole grain flours. We have always known that whole grains are best use as quickly as possible, due to their higher oil content, but sourcing affordable freshly milled grains was nearly impossible back in 2006 when we opened. So, over the past 16 years, we went from begrudgingly purchasing commodity whole wheat, to using custom-milled and delivered whole grains from the groundbreaking Maine Grains (founded in 2012), to finally milling our own flour just days before using it.  Milling is a science, just like baking is, and we wanted to make sure we could devote the attention to creating a raw ingredient that our product deserves. We are finally there, and we’re proud to bring you local grains, milled in-house, as fresh and as healthy as they can be."

And we LOVE that here at Family Dinner for what it means for the New England food ecosystem.

Shannon explains:  "Prior to the 1900’s, New England was once the breadbasket of the US. Although due to pressure on the soils, changing market conditions, and the growth of grains in the midwest, by the early 1900’s most farms switched away from growing grains in the northeast. In the last few decades though, passionate farmers, bakers, and local grain advocates have been pushing to bring back grains to New England. Folks like Andy and Jackie from A&J King are key to making change happen in this system to encourage more acreage of local grains as the demand grows."

RECIPES (ME/NH)

Grilled Chicken Sandwich - A thing of beauty when done properly. My preference for a bun is a classic potato roll or something similar, but brioche is pretty dang tasty (thanks again, butter!).

Swordfish with Tomatoes and Capers - Classic flavors, right here. And grilling swordfish is a great and satisfying way to get the feel of fish on top of fire.

Green Chile Chicken Enchiladas - Tasty and comes together quickly. Not sure about this shredding chicken in a stand mixer thing. If there're any takers, report back!

Pickled Carrots - Pickled carrots are pretty addicting just straight out of the jar but they're also an awesome thing to slice up and throw on/in just about anything, from burgers to salads. Equally handy to have in the fridge are pickled radishes.

Baked Kale Chips - I like that there's a section here about storage. Which would be handy if you can resist consuming all of these over the course of a day but I wouldn't know anything about that. Healthy snacking (kinda, sorta, maybe)!

Chile Rellenos - Anaheim and poblanos are pretty similar and most of you will be getting a mix of both. This is an excellent use of them.
