We can CHARDLY believe it!

There is a moment every Spring where the availability lists from farmer's start to brighten up a bit. We see the appearance of arugula, bok choy, bunched items and the true harbinger of Spring, Fiddleheads. For these Spring delicacies Shannon's enthusiasm was already through the roof, sending the team a deluge of exuberant texts to see if our excitement could rival her own (impossible).

It was a pretty rosy day here at Family Dinner. And then the Chard arrived. 

Unwrapping these beautiful bunches Shannon actually left Earth and is currently orbiting around the stratosphere leaving nothing behind but a contrail of squeals and exclamation points.

BONUS VEGGIE SEASON!!!!!! 

Y'all I've been teasing this for a few weeks but we're into SPRING CROPS!!!!! If you cannot tell by the amount of exclamation points, I am just a little bit excited. And, that also means we're in bonus veg season AKA tops of radish/carrots/beets and others! One of the best ways to use them quickly is to turn them into Pestos, chopped into salads, sautéed, and many more ways! Make us proud and use all your veggies :) Additionally, for longer storage of the veggie in question, cut the greens as soon as you get them and store separately. 

Fiddleheads!!! - These are the unfurled tips of the Ostrich Fern foraged by Joe Czajkowski's folks in Western Mass. These spring delicacies scream to me that the season has truly changed and warmer weather is on it's way! Don't be intimidated, this Food52 article has 8 ways to use them. Make it a special night this week to be intentional with your cooking and enjoy the specialness of the Fiddlehead! 

Seared Bok Choy - With a super hot pan at the ready, you'll have this delicious side for dinner ready in no time! Serve with Crispy Tofu, or Chicken Breast or Leg Quarters, or Calamari.

Grilled Skirt Steak with Pesto Butter - Skirt steak is one of my favs. It's super beefy, easy and quick to cook, is a great pallet for other flavors and, when cut across the grain, is pretty dang tender. Here's one of many great ways to cook.
 
Flounder and Sautéed Mushrooms - 20 minutes. Easy weeknight dinner.

Chorizo Hash and Eggs - If you were like me and devoured all of last week's delicious tortillas already, check out this dinner/breakfast. If not, refer back to last week's recipe for chorizo and potato tacos.
 
Salmon With Warm Lentils - Roll with me here. First off, arctic char is very similar to salmon in its fat content but has a more mild flavor, a little closer to trout. Thus, we will often use arctic char as a salmon replacement. Second, I can't find the exact recipe but it's a combo of this lentil recipe and the cooking technique in this salmon recipe. It's amazing.
 
Marinate Mushrooms - Awesome to have on hand for antipasti, on some crostini with micro greens on top or mixed with some mesclun, vinaigrette and a soft boiled egg.
