NEW GRAINS IN THE HOUSE

This week we have a new product for our vegetarian shares, bulgar from the folks at Koy Pantry.

The little AI birds whispered this little nugget about bulgar in my ears just now: Bulgur is a whole grain made from cracked wheat berries. It's an ancient grain that was popular in the Mediterranean region and is mentioned in the Old Testament. Bulgur is high in fiber, vitamins, and minerals, and it can be eaten plain like rice or couscous, or used in many dishes.

A bit more about these folks:

"Koy Pantry, based out of Woburn, Massachusetts was founded in 2023 by friends Baran, Seckin and Serdar in hopes of sharing the flavors and stories of their homeland, Turkey. Baran and Serdar, who live in the Boston area love to cook and whenever they would visit their homeland, they would bring back suitcases of ingredients that they had difficulty finding in the States.

They decided to build a brand that would specialize in artisanal, small-batch pantry items from smaller producers in hopes of introducing Anatolian flavors to the Boston area and beyond. After launching about a year and a half ago, you can now find their products at many of the specialty food stores and in dishes at some highly acclaimed restaurants in the Boston area and their online store ships directly to anywhere in the States."

This is a perfect summer grain. We're serving it up to you with fresh mint so you can go wild with delicious salads like this.

Recipes

We've got fava beans in-house! A favorite seasonal treat, these meaty legumes are a bit of a labor of love but I quite enjoy posting up outside (when it's not 10000º, at least) and taking my time shelling these tasty treats. What to do once they're shelled? I love a piece of seafood nestled on top of a fava bean succotash nest or mashed up with some mint and pecorino on some crusty bread. Holy crap I want both of these so badly.

The Best Way to Grill Sausages: I know we've said this before but the simmer-then-grill method really is the best move.

Bulgur and Mint Salad: I'd definitely throw some of the cukes and fava beans in this deliciousness. And I'd not be too bummed if some of the mozz ended up mixed in either.
