TUNA AT SUNSET

This week's newsletter may sound like the title of a terrible Jimmy Buffet song (admittedly redundant - they're all terrible), but it's more an ode to a delicious fish and the end of summer. 

This week we are so excited to have Tuna from Red's Best in all the Omnivore and Pescatarian shares.  It's ready for a sear as a main dish or for a perfect Salade Nicoise to pair with a crisp glass, or few, of white wine. The possibilities are limitless and all pretty awesome.

For our side we will be stealing from the menu of the Sunset Club in Newburyport.  This is the newest gem from the great folks who own Trina's, Paddle Inn, and Parlor Sports (the bar responsible for the genesis of Family Dinner! We spent WAY too much time there 4 years ago, noodling over ideas, crushing cheeseburgers, and planning out this crazy venture). The Sunset Club is a beautiful spot to sip rose, delight in delicious nosh, and watch the sun go down. If you have a viciously competitive streak, they have all the yard games you need to ruin your friendships while you sip cold beers in the sunshine.  

If you are in the area, or hell, down for a road trip - this place is calling your name. A beautiful spot with great food run by wonderful folks. A few hours there on a lazy afternoon is the warm hug we all have been needing.

Their tuna poke bowl with sticky brown rice, avocado, and radish is the dream that we riff on a lot at home.  We do a quick pickle on some onions and leftover cukes, lightly dress some greens and rice, and chop the tuna in bite sized bits with a bit of soy and rice wine vinegar.  We've made this roughly one billion times and it never disappoints.

For a new idea on how to treat the star of the show, this beautiful big eye tuna, we will defer to the Master. We asked Chef Pam King, Chef de Cuisine at Paddle Inn and now at Sunset how to handle this treasure. She suggests:

"Fresh tuna is great when coated in sesame seeds and seared in a very hot pan with just a little oil, about 30 seconds each side depending on thickness, longer if you want it cooked all the way through. This is great on top of a bed of spicy greens like mizuna and arugula with fresh grapefruit and herbs like mint and scallion. A quick dressing of sesame oil, ginger, honey, and lime juice can be drizzled on top, and don't forget to finish with a little salt!"

Plum Pierogi - Okay, sometimes I have a lot of fun looking up different ways to cook up all these local treasures. This one just sounds like a fun activity and delicious dessert!

Grilled Delicata with Kale - My reaction when the farmers started getting back to me suggesting squashes already: AHHHH. But then I thought, ooooh, slap them on a grill and I'm all in! 

Mediterranean Ground Beef Stir-Fry - This is what I would also consider an "empty the fridge" type recipe. Still have some Swiss Chard kicking around? Random bits of peppers and onions, you betcha! 

Radicchio and Apple Salad -  A nice and light salad where you could add any leftover greens or even tenderized kale!

Carrot Top Pesto - On my never ending crusade to get you all to eat the greens, when your share arrives, simply take off the carrot tops and throw them into a blender with a few other ingredients and you've got something reallllly yummy to throw on top of anything from roasted veggies to PIZZA BAGELS
