Thursday we took a trip to Couët Farm and Fromagerie to get the fresh, delightful cheese you find in your shares this week. This little slice of heaven is located in Dudley, MA and is run by Marie-Laure Couët, her mom Marie-Christine Zolcinski Couët and their tight-knit and talented team.
Touring their sparkling clean, fastidiously organized (my favorite!) facility was a marvel. Watching Catrin do the affinage in the cave (pictured) with incredible efficiency and respect for the product was to watch an expert at her craft. It was exhilarating.
We also love the mission of this woman-owned business:

And speaking of those beautiful cheeses, this week we have Herbed Adelisca. From Marie-Laure:
"Adelisca is a fluffy, citrus, fresh cow's milk cheese, perfect for spreading on crusty, toasted bread and crackers. This cheese is named after my great grandmother from Québec, mother of thirteen children. As was the woman, Adelisca the cheese is versatile. It loves garlic and chives as a summer breakfast spread (...) Missing sour or heavy cream or ricotta? Adelisca wants to help! This cheese is made from pasteurized Holstein and Jersey milk from our neighbors at Walnut Lane Farm in Dudley. It is un-aged and offered at its peak brightness and freshness."

The Best Meal Ever- Take your Adelisca cheese, your Brewer's Crackers and a bottle of chilled white. Put on your favorite sweatpants and commence watching Netflix. We recommend GLOW- The Gorgeous Ladies of Wrestling. It is a comedy based on the real story of lady wrestlers in the 1980's and it is wall-to-wall awesome.
Seafood Chowder: This seems complex and it isn't. Also, you want to eat this all day - warm, savory and a nice touch of salt. If you have bacon, go for it. You can also sub in Chorizo for a spicy understudy.

Chef Joe’s Charred green tomato salsa verde
2 pound green tomatoes
1 jalapeño or serrano peppers
1 medium white onion skinned removed
2 cloves of garlic minced
1 cup finely chopped cilantro
1 lime
Salt to taste
Rub tomatoes, jalapeño and onion with neutral oil and place on hot grill. Char on all sides. Remove, cool and half. Place in food processor with garlic, pulse to combine. Add cilantro and salt. Pulse to combine. Remove and place in bowl. Squeeze in lime juice. Stir, taste, adjust seasonings if needed. Enjoy on everything from eggs to tacos!
Savoy Cabbage Salad: EMPTY DAT FRIDGE! If you have your corn from last week still, or some kale or onions- get 'em on in this pool. You can top your tacos with this or use it as a bed for grilled chicken or fish. YUM.
Grilled Fish Tacos: We talk a lot about frying fish around here. That's because its delicious. But this haddock can also grill up nicely with a cabbage slaw and some citrus. Or with a tangy sriracha aioli. (Mix equal parts sour cream, or mayonnaise with as much of the hot stuff as you like!)
