Hey friends, we sure are desperate to get our bags back. You may have noticed your shares coming in paper bags (sigh) over the past few weeks. We are not making any changes in our aim to be a zero waste company, we just don't have a ton of our bags to reuse. If you have 3 or 333 of them, please leave them out for your driver and let us get them back into rotation!

On to the good stuff....

The weather has been a real pill over the past few weeks. From stunningly warm and welcoming to driving rain and some snow, yes snow on Wednesday. It's been a real slap in the face to our hope and optimism but then again - what hasn't been. All that to say, while farmers are busy tucking seeds into soil in greenhouses we still have a few more weeks of roots to enjoy.

This week Joe put his pinkie up while ordering the veggies and got a little fancy. He picked out Pinto Gold potatoes for the shares and man are they something special.

The Pinto Gold potato was developed through a cross between two cultivars in a USDA potato breeding program in Idaho in 2006, and further developed at the University of Maine, being released in 2018 - just in time for her debut, honey.

According to the experts Pinto Gold potatoes have a distinctive appearance with a dappled or piebald*** skin, featuring pink and gold hues, and a smooth, buttery yellow flesh. I just want to boil them and add gob upon gob of butter, herbs and Maldon salt.

***And if you grew up as a weirdo little teenager in the late 90's maybe that potato description sent chills down your spine as you recalled your affinity for the indie hard core turned emo band Piebald. Hailing from Andover (support local!) before crashing into the Boston music scene these dudes pumped out tunes that were sad, retaliatory and infinitely sing along-able. Awkward little goober that I was, I loved it all. That music made me feel special, like a pinto gold potato.

We also have fresh salmon from Red's Best this week. How about sheet pan salmon with potatoes and herbs? And if you simply can't get enough salmon, did you know we carry frozen salmon in the store? It's always here for you for an easy weeknight meal.

Recipes

Sheet Pan Sausage and Veggies - This is a vegetarian recipe but works equally well with non-veggie sausage. And you can throw whatever other veg you'd like on there. Peppers, onions, turnip, sunchokes, etc. You'll want to mind your veg's various cook times (big ole' hunks of potato take longer than little ole nuggets of parsnips) and adjust the size you're cutting them into or when you add them to the rest of what's in the oven.

Olive Oil Slow-Poached Salmon With Fennel - I love oil poaching fish. Super flavor and virtually fool proof. And will be serving alongside...

...Crunchy Parmesan Kale Salad - Great texture. Satisfying as heck. Great side for just about anything. Or as a main.

Simple Grilled-Potato Salad With Grilled-Lemon Vinaigrette - I'd be remiss if I didn't highlight the Pinto Gold! It's one of my favorite potatoes (YES I CAN HAVE MORE THAN ONE FAVORITE POTATO) and shines in recipes like this. Which, by the way, are a great side to some grilled salmon and a crunchy kale salad.
