Good Morning!
A few things:
- Given that it's hotter than Hades, a cooler is a great thing to leave out, even if you are gone for just a little bit.
- We are still working to find an industrial cleaning company to work with us on taking all the bags back and getting them spiffed up and ready to be back in the rotation, we will let you know when we do!
- Shannon is on the email mic again this week, get ready for a quick trip to PunTown.She's really excited about this week's Napa Cabbage from Clark Farm, but not NEARLY as excited as Graham (pictured above), Farmer in Training, who is Clark Farm Royalty. He's an inspiration. Look at how pumped he is! My goal is to be 1/10th that pumped for at least part of today.

Good morning! I hope you're awake because it is not time for a NAPA!
In the vegetable world, if you want to talk about a powerhouse family of crops, look no further than Brassicas (Brassicaceae, if you’re feeling fancy and want to use the actual taxonomically correct Family name). Why? Because there are so many kinds of vegetables within the family: bok choy, broccoli, brussel sprouts, cauliflower, kale, kohlrabi, mustard greens, radish, romanesco, turnips and the highlight of our week this week: (Napa) Cabbage!
Napa Cabbage, Brassica rapa var. pekinensis, is a cool weather, Chinese cabbage traditionally grown in eastern Asia. One of the earliest notations of Napa Cabbage originates in the 15th century China. From there, it spread to Korea and then Japan. As brassicas are a large order, cross pollination between two crops can create new varieties. It is thought that Napa Cabbages were created by a hybridization of turnips and pak choi.
With its high water content, Napa Cabbage can take on sweet and juicy flavors when cooked and especially picks up other flavors well too! Add it to stir-fry or soups, eat raw in salads or slaws, or steamed into a cabbage roll, you can’t go wrong with this shining star of the brassica family.

RECIPES
Mackerel Vin Blanc: Simple and delicious. Any veggies will work in the broth. Save some vino for your self, you've earned it.
Cabbage Rolls: This is just a placeholder idea for the format of the roll. Use tofu, chorizo, ground beef - anything that is calling to you from the fridge/freezer.
Grilled Napa: Get your left over cabbage a facelift with some garlicky sauce as a perfect side.
Yellow Fin: Don't. Overcook. Your. Fish.
Tuna Crudo with Capers: Sometimes known as Sicilian Sashimi, this dish is an effortless way to enjoy raw tuna in all of it's glory.
