Lovin' on Latkes

This week we have spuds this week in all shares and we can't stop dreaming about making latkes. Whether you make 'em with the traditional white potato or prefer a sweeter tuber, we have you covered with a few recipes, such as this gem from the Kitchn. 

There are myriad ways to attack latke preparation but as the KITCHN crew says:  "Every Jewish family has a different take on latkes. Some are flat and lacy, while others are thick with substantial chew. The beauty of this food is in its near inability to be bad. After all, we are talking about potatoes crisped up in fat. If you can achieve that, any recipe is sure to be delicious."

Not to exaggerate, but I think the words "potatoes crisped up in fat" may be a lost love language.

And not to blow your mind entirely but the latke has some of its earliest humble origins  in Italian cuisine and they were made with cheese. Just when you thought life couldn't get any more glorious. If only the 12th century Italians also had Netflix and a desire to stay home alone with a bottle of cold white.

"Of course we associate potato latkes with Hanukkah, but in reality latkes descends from Italian pancakes that were made with ricotta cheese. The first connection between Hanukkah and pancakes was made by a rabbi in Italy named Rabbi Kalonymus ben Kalonymus (c. 1286-1328). According to The Encyclopedia of Jewish Food by Gil Marks, the Rabbi “included pancakes in a list of dishes to serve at an idealized Purim feast, as well as a poem about Hanukkah. After the Spanish expelled the Jews from Sicily in 1492, the exiles introduced their ricotta cheese pancakes, which were called cassola in Rome, to the Jews of northern Italy. Consequently, cheese pancakes, because they combined the two traditional types of foods–fried and dairy–became a natural Hanukkah dish.

Sweet Potato Latke's - Like normal latkes.... but sweeter. 

Broiled Haddock - 20 Minutes and simple seasoning to use with any number of veggies or sides. 

Parsnip and Pear Soup - While I love a parsnip/apple mash to go with pork, I also love this parsnip pear soup and a good book on a rainy day like today! 

Sea Bass and Mushrooms - 35 Min till dinner! Easy weeknight meal. 

Crispy Roasted Brussels Sprouts with Shallots - This recipe got my parents to actually eat brussels sprouts!

Potatoes are magic. And latkes honor their magic like few other dishes do so keep it simple. This recipe served with high quality accoutrement (poached eggs, smoked seafood, sour cream, home made applesauce, etc.) and some bubbly. Get after it.
 
Now for something completely different: Pizza night! This time we've got some dough from The Good Crust. As always, for the dough, defrost overnight in the fridge and then a few hours before you plan to shape it, let it rise, covered, on your counter. It'll be way easier to work with.
 
Spicy Pork Sausage and Mushroom Pizza - Direct from the source! We've done some of the heavy lifting by providing most of you with some of Colvard & Co.'s excellent Spicy Fennel Sausage. Or omit if you're not feeling meaty (or perhaps if you're feeling too meaty... tis the season, after all).
 
Italian Sausage and Mushroom Calzone - Or calzone it up. Here's one standard-cause-it's-delicious version but the world is your filling.
 
Other Pizza Dough Uses
Radicchio and Delicata Salad - We're a bit addicted to the classic combo of sweet delicata and bitter radicchio. The creaminess of the interior of roasted delicata squash along with its toothsome skin and the crispy radicchio is downright dreamy. (Pro tip: great as pizza toppings, too.)
