For this festival of lights, Joe and I owe you an apology!

In our Sunday email we highlighted the Matzoh ball soup from Mamaleh's for the holiday. One of our customers graciously informed us that that deliciousness is more of a Passover delight than a Hanukkah meal and that latkes are the preferred snack this season. Mea culpa! We feel like uninformed dweebs!

Holidays inaccuracies aside, we still want to sing the praises of soup from the rooftops. Vegetarian soup of the Week and Matzoh Ball are here for you as the weather gets chilly and your nose starts running like Usain Bolt in the 2012 London Olympics. (have you seen this video of him running against normal people? Wild.) Easy meals to keep you ... running.

So in the name of redemption and because we love you a latke, we wanted to focus this newsletter on that most perfect potatoey preparation.

A traditional Latke calls for grated potatoes, a binder, and an oil bath. And while I am not sure there is any more perfect food (except buffalo chicken dip, of course) I think we have some space for creativity. Staunch latke traditionalists - prickly porcupines that you are - you may wish to avert your eyes and abandon ship here. Tell your Bubbe we are sorry.

The winter offers us tons of "grate" vegetables that can be shredded and stand in for the potatoes in a latke. How about a parsnip latke? Or a taking a turn for the turnips?

You could go crazy with carrot latkes, whatever your holiday heart desires.

Recipes

Cheeseburger Pizza - YES. This is delicious. Pickles on pizza all the way. For those getting the Grain of the Week or Gluten-Free Grain of the Week: let's go.

Butternut Squash and Parmesan Dip - Would be a delicious addition to your holiday snacking. And a great companion to the Rosemary Flatbread Crackers from Brewer's.

Vegan Stuffed Butternut Squash - Am I always posting stuffed squash recipes? Feels like it. But this one is vegan. I'd sub the spinach with the lovely collards from Pete's and, if you've got anything vegan to pack some more umami punch, use it. Straight MSG? Sure. Nutritional yeast? Yes please.
