We recently had the pleasure of getting to re-visit Dandelion Spring Farm in Bowdoinham, Maine. Beth Schiller, owner of Dandelion Spring and her crew of almost entirely women (and two dogs!) run an amazing operation that yields incredible produce - including the arugula in this week's Maine and New Hampshire shares.
A bit more about them from their site:
"At Dandelion Spring Farm, we grow MOFGA certified organic vegetables & herbs on unceded Wabanaki land in central Maine. We are one of over 500 Certified Organic farms and processors in the state with a dedication to soil, community, and safe and nutritious food for all.
In Maine there are delicate lettuce heads and sweeter than you can imagine spinach picked from soil in the dead of winter. In these early summer months the winter squash is already in the ground, and the tomato plants with their first flowers are showing promise. On July 4th, as with the ancestors of this land, our independence is linked to the land and cycle of the seasons as we seed all of the carrots, beets, and rutabaga that will then be harvested and stored in the fall. These roots will bring us through the winter both nutritionally and financially."
As we toured the farm we learned more about their dedication to soil health that borders on obsession. They are committed to no-till methods. Tilling is a way to mechanically agitate soil, which eventually leads to soil erosion. No till methods and cover cropping decreases soil erosion, increases water retention and helps keep a variety of organic matter in an on the soil. Do these methods take more time and effort? Sure. But the produce that comes out of this soil is nothing short of spectacular.
Beth Schiller, owner of Dandelion Spring wrote an intensely eloquent and impassioned article for Patagonia this year about the critical nature of soil health and the threat of PFAS, or forever chemicals. It's a tour de force about dirt.
Knowing the farmers and makers is core to what we do. Learning from them, hearing their passion reinforces our own. It makes us immensely proud to be a part of this community and bring you the delicious fruits of their labor.

Butternut Squash Pizza - Fall Pizza, make your fall pizza!
Pan Fried Redfish with Melted Leeks and Squash Puree - Wow....okay. This sounds incredible.
Pan Roasted Chicken with Leeks - One pan meal and all its glory! Or take those leeks and make a delightful leek tart!
Steamed Fish and Napa Cabbage - You can make a play on these sauces with whatever you have in your fridge/pantry and make it your own!
Napa Cabbage Salad - I love the texture that napa cabbage adds to salads. Whether you make this salad or cut up to add to other greens, you can't go wrong!

Recipes (ME + NH)
Arugula Steak Salad With Pears and Blue Cheese - I love steak in salads. Generally with french fries ('sup, Pittsburgh?!) but also with some fruit and a flavorful cheese. This checks the healthier boxes. Given that most of you will be getting some lovely strip as opposed to flank, I'd suggest cooking the steak thusly.
Sole Piccata - Can't really go wrong here. A great recipe to have in your back pocket for chicken/veal/pork cutlets, other thinly filleted seafood or even mushrooms.
Eggplant Parm [video] - Watched this yesterday and will definitely be making soon as it addresses pretty much all the general issues I have with other versions. A labor of love but you're worth it.
Pear & Leek Soup - Slightly sweet and creamy, this is a total crowd pleaser and comes together pretty dang quickly. Would absolutely toss some sourdough croutons on there. Also, VEGAN (and very freeze-able).
Butternut, Pear and Leek Salad - Man... if this doesn't scream fall, I don't know what does. Great salad to serve alongside some soup. And leftovers would be pretty perfect for lunch the next day.
