B.Y.O.S
The B.Y.O.S acronym could mean a whole slew of things (Bring Your Own Stegosaurus?) but here we are talking about the "Build Your Own Share" options with Family Dinner.
This allows you to customize the components and amounts of your share a bit more. You can add meat or fish each week, choose veggie shares of different sizes etc. These can be add-ons to your current share or you can design your full share out of these parts.
Some of your waved the flag that you wanted more meat (and more of the same kind) to feed the unquenchable appetites of a houseful of teenagers. Some of you wanted to say YES to veggies and fish but take a hard pass on eggs, dairy and grain.
We hear you! Thanks for the input! We have been slowly rolling out the B.Y.O.S concept and gathering feedback.

GLOSSARY!
Friends, this week we have a few new items that may require some introduction:
Ramps: Ramps are spring onions- they look like scallions, but sexier. They sport longer leaves and a bright oniony flavor. We had a few last week for double shares. We don't love to repeat items week to week but the growing season is short and we wanted to include them while we could!
Bone Broth: This deliciously rich broth was made for us by Grace at TruProvisions. Grace is an incredible cook and suggests that you drink this broth as a beverage with a touch more salt and lemon. That'll cure what ails ya. You can also add it to soups or beans to deglaze pans.
Quark: Quark is a soft cheese that has its origins in Germany but is popular all over Europe. Think of it as a marriage of yogurt and ricotta. Spread it on bread and top with your favorite veggies for a quick snack. Fold into omelettes or into your creamy soup.
If you have plain quark mix in some sriracha for a nice dip for crackers, baked chicken or chips!

Cooking Beans: These beans from Baer's Best are different from your normal dried bean- they don't require the pre-soaking. You can skip that step in this recipe. He suggests you cook for about 90 minutes.
Some info on the beans from farmer Charley Baer:
" Our farm produces around 20 varieties of heirloom and specialty beans each year. As a small farm we can harvest each type at peak maturity and quality. After the drying process is complete in the barn, the crop is cleaned with conventional screening machines followed by state of the art gravity separation. One final time consuming step we take with the beans is to use 100 year old hand grading machines to do final QC. This results in a top quality product far better than commercial grades. Our crop is always fresh harvest and cooks quickly, without the need for presoaking."
Spiced Rubbed Steak and White Beans: This plate is so warm and cozy.
Ramp and Bean Soup: We are going to take a stab at improvisation her and take a riff on Martha's Ramp and Barley soup and step in with the cooked beans.
Steak Salad with Grilled Ramps: A nice Sunday meal to share.
Grilled Steak and Bok Choy: I could eat Bok Choy every day of the week, especially when its bathed in a soy ginger sauce.
Salmon with Ramp Beurre Blanc: Beurre Blanc is one of those sauces that sounds intimidating but isn't so scary. And once you've done it a few times, its a great thing to have in your arsenal. The addition of ramps sends this through the roof on the tasty scale.
