A Conversation among Giants

If you're anything like me you've been consuming news and content in roaring deluges. Between the endless emails, the doomscrolling and the bets on whether former British PM Liz Truss would outlast a head of lettuce (a truly delightful nugget of journalism) - it can all feel like... a lot. Content consumption is a sticky wicket and a hard habit to kick. 

To balance the fire hose of negativity I have been trying to introduce spoonfuls of editorial sunshine into my day to brighten things up. Enter The Bittman Project. The Bittman Project is the creative genius of Mark Bittman, famed NYT writer and journalist, along with a stunning quilt of other chefs and writers. In it he shares recipes on how to cook, yes. But also dives into issues that are more nuanced around what is on our plates; food access, the environment, justice, and he highlights heroes in the field. 

On the site he writes: " I’m now channeling all of my energy into The Bittman Project as part of a team that shares a common set of values: specifically, that food should be fair to people and animals, affordable for everyone, nutritious, and produced in a way that respects nature and the environment. Food should also taste good; more often than not, that requires shopping, preparing, and cooking"

It's brilliant writing; thought provoking and invites a healthy optimism and a sense that we all have a role to play in the story of local food. 

There is a pay wall, $50 a year. (We should pay for the writing, the art we consume.) But if $50 a year is out of reach for folks, Bittman invites them to write in and say so (no further explanation required) and the subscription will be theirs free of charge. High fives, that's awesome. **

This week he highlights his interview with the inimitable Alice Waters (pictured above like the QUEEN THAT SHE IS), founder of Chez Panisse and OG in the local food movement.  She is a chef, an author, an activist and a humanitarian and an endlessly knowledgeable writer. Everything in the modern local food movement is coated with her fingerprints. She is a giant. 

Take a listen to the interview, it's a delight.  And maybe think of Alice Waters as you unpack your shares this weekend, in her words:

I think it's really the place of great sensorial experience to eat exactly in season, and when that's over, you go to the next thing, and then the next thing, and then you're connected to nature all of the time."

Pesto (with any greens) - One of my favorite ways to use up greens I'm not sure if I'll get to is to turn them into pesto! Take that pesto and add to pasta or with a little mayo on a sammy! Delish!

Roasted Cauliflower - I will 100% be making these this weekend!

Recipes (ME + NH)

 

Chicken Piccata -  This was a childhood staple in my family. Tasty, not too fussy, and a total crowd pleaser.
 
Poached Chicken With Watercress and Miso Dressing - Poached chicken gets a bad rap. And understandably. It can be bland and dry and pretty depressing. This recipe gets it right and would be great subbing the watercress with the lovely arugula from Dandelion Spring.
 
Carrot, Hakurei Turnip and Ginger Bisque  -Gloomy weather means soup. And this one comes together in no time.
 
Butter Poached Fish  - More a technique than a recipe, you could really use just about any fish. I’m especially into this with monkfish as its lobster-y sweetness is pretty dang delicious with butter.
 
Bibimbap - This is not a quick recipe but, make it for a crowd, and you’ll be rewarded handsomely. Plus leftovers.
