One Fish Two Fish

We have red fish in shares this week and we are tickled pink.

This firm white fish is ready for a simple preparation with a blackened rub served with all the greens that are enthusiastically (and finally!) coming out of the ground.

I like to batch make a seasoning, keeping it on hand for all my myriad moments of laziness. If your laziness is truly in the driver's seat (no judgement), may I suggest some of the blends from Curio Spices? Local and woman-owned, these mixes will keep your dishes delicious and your measuring spoons unsullied. They also make great gifts.

While you are unpacking your shares murmuring One Fish, Two Fish, Red Fish, Blue Fish please reflect on the enduring genius of Theodor Seuss Geisel. Local legend Dr. Seuss was born in Springfield, MA (#local) and got his nom de plume while at Dartmouth college in the 1920's. He got his start in political cartoons and went on to work in animation and film for the US Army during the war.

I cannot help but wonder what rhymes the good Dr. would scribe on the current administration.

Donald the Orange sat on a wall,
Talking loudly, making no sense at all.
Waving small hands with a foundation caked face
Sending the country to the depths of disgrace

Red tie swinging to and fro,
Tweeting like he has a head full of blow
Threatening to invade countries near and far
Making JD Vance look like a reasonable person and a statesman which of course he is not -he's also awful.

My rhyme really falls apart at the end but you get the idea.

Don't be afraid of the red fish if you have never cooked it. That simple rub, and warm pool of butter and presto chango - supper is ready.

All The Cuts Of Beef And How To Cook Them - We buy whole animals from Gabe and Molly Clark from Cold Spring Ranch. While it would kinda be cool if cows were made of 100% ribeyes, they're not. And that's part of the fun. There're so many cuts of beef and, with that, myriad uses. TBH, the less-heard-of-cuts are some of the most fun and rewarding to work with. This primer sets the stage.

Mediterranean Lentil Pita Pockets - The lentil fingers from Magic Bites are, well, magical. So damn good and so damn good for you. This is a great use. I'm keeping mine whole as the that nice little resistance adds to an amazing bite.

Pan Seared Pork Chops in Wine and Mushroom Sauce - Ignore the references to fall here, folks. As we've been yelling from the rooftops, short of getting out there and foraging your own, Underground Mushrooms is the best thing going. It almost feels criminal to do anything but sauté them in butter and garlic to serve alongside the Cold Spring Ranch pork chops but this rich and decedent jam is worth it.
