It's the Tops

This week (and next week for ME/NH folks), we're excited to get you all something a lil' unfamiliar: beautiful brussels sprout tops from Riverland Farm in Western MA!

Just as garlic scapes are a harbinger of spring, these leafy green bundles just scream "FALL" to us. And in both cases, they're harvested so the plant can then direct its energy into the growth of the crop that's coming down the pike.

Riverland Farm, owned by Emily Landeck and Meghan Arquin, grows 40 acres of organic vegetables along the Connecticut River in the Pioneer Valley of Western Massachusetts. One of their favorite vegetables to grow is brussels sprouts, which are harvested for both the stalks and the tops! The tops are harvested about a month before the rest of the plant, allowing it to direct all its energy into the still-growing sprouts. Brussels sprout tops have a rich brussels-sprout like flavor, with a texture akin to chard or kale, and are excellent sauteed gently with garlic and red pepper flakes.

Brussels Tops & Root Veg Stir-Fry With Sesame - We love the simple preparation described by Riverland at the top but this would make a lovely main that just happens to be vegetarian. And, should you be so inclined, toss in the protein of your choice.

Creamy Chicken and Leeks - Good as is but could definitely use as a base for a tasty pot pie or just throw some puff pastry on top.

Maple-Mustard Sheet Pan Salmon With Delicata & Broccoli - Squash season is upon us! This sounds like a great way to kick it off.

Burst Cherry Tomato Pasta - Sad to say but these will be the last tomatoes of the season. We think this is a perfect dish to bid them adieu till next year.

Pork Chops with Apples and Butternut Squash - Out with the old and in with the new! It's almost Oct. which means squash and apples. And what better protein to pair them with than pork? (I'm super excited for these pork chops from Cold Spring Ranch, by the way...)

Spicy Salmon with Shishito Peppers - Gotta say, the pic in this recipe is making me hungry.

Eggplant “Unagi” - I admit it... I'm not the biggest fan of eggplant. It's fine. I'm capable of enjoying it but it's just not something I get psyched about. Except when it's prepared thusly. 🤤
