An Ode to Beef

Chilean Poet Pablo Neruda was famous for his odes to simple things. His romantic reverence for tomatoes and one to his socks come to mind. Clearly a comfort foodie at heart, I find it somewhat astonishing to not find, in his canon of work, an ode to beef short ribs.

This delicious cut of beef has made it into some of the shares recently, hailing from the good folks at Pine Ridge Acres and Cold Spring Ranch in Maine.

The dishes that are transformed by this beef, like carnivorous alchemy are so hearty and comforting that we begged the farmers for more. We will have them in the add -on store this week, in two sizes for your cooking delight.

May we suggest pressure cooker short ribs, pictured above? We made 4 pounds of them and serve them: over pasta, in tacos and finally made a risotto with the leftover broth.

Riff like crazy on this dish, it can handle your whims. Add a bit more wine, some root veg or extra spices. Go nuts until you look like some deranged version of the Swedish Chef; drunk on power and Pinot Noir.

Best Bacon: Everyone has their ideas. I think the best bacon is cooked in the oven on a cookie sheet at 425 for 16 minutes. The folks at the KITCHN have ideas too!

Recipes (ME + NH)

Pan-Seared Pork Chops with Blueberry Herb Sauce - Pork takes to fruit like ducks to water. This bright and herby blueberry dressing nails it.

Pear Chutney - I wouldn't mind this pear chutney on a pork chop, either. In fact, this and the blueberry sauce above would work well with the swordfish. The world is your entrée!

Lemon Garlic Swordfish Recipe - Speaking of swordfish... A handful of capers wouldn't hurt.

Winter Minestrone & Garlic Bruschetta - We'll be having this for dinner this weekend. Sweet butternut squash is a great foil for the herby, garlicky broth. Omit the pancetta and use a veggie stock and you've got a great vegetarian crowd pleaser, too.

Smashed Sunchokes With Thyme-Butter Recipe - Sunchokes. AKA Jerusalem artichokes. Don't be afraid. They are dang delicious. Nutty, sweet and crunchy. These would be a great side or even a snack along with something to dip them into.
