As we await a shipment of new bags, we will be temporarily packing some shares in paper. We apologize for the inconvenience! Also, as a reminder - we love, love, love getting our fabric bags back. Love it!

We have a hankering for day boat scallops so we are highlighting them again in the store this week. Scallops from True Fin are harvested only from the Gulf of Maine. They are so perfect in a butter bath over pasta. Give them a go, we hope you love them!

Baking with the Best

Meet Jen and Tucker, two of the amazing folks behind Forge Baking Co, Bloc and Diesel cafes in Somerville. Forge brings a constant string of delights into the Family Dinner shares including the hearty soup of the week, the pillowy perfection of focaccia and the transcendent chocolate brownies. (Is it overkill to call a confection transcendent? In this particular case, assuredly no.)

The team at Forge has a near obsessive dedication to excellence in ingredients, preparation and service which shines through in the product in every way. As you tuck into this week's pastry of the week, my words will echo in your ears like an army of pastry huffing cherubs singing the praises of a Maple Scone.

This dogged pursuit of quality and excellence extends to all corners of the organization; not least of which is the care shown to the workers and to the team at large.

Forge recently ratified a union contract with employees, making them one of the first cafes in the Commonwealth to do so. The contract includes increases in wages and other measures.

What's so stunning about this organization is that so many ingredients one might rally around in fair labor negotiations; insurance, paid breaks, 401(k) - were already in place well before the signing of the contract. It's like asking your folks for a PS2 with Mario Kart Double Dash for Christmas only to find they already had it wrapped in laundry room for you.

These folks have been doing it right since the beginning - they are the gold standard for a fair, inclusive and progressive work place.

CEO and resident badass Court Verhaalen put it this way: " Working with NEJB on negotiations was a learning process for all of us. Recipes (MA)

Beef Koftes : I "grill" these in a cast iron. Two reasons; a) I'm lazy and b) the grill is outside and its February, people!

Stuffed Squash: As you're making the filling, dig around the fridge for wilting greens, a sprouting onion. Anyone can join the party.

Shredded Carrot Salad: This seems absurdly simple because it is. It will also hold in the fridge for a few days. Serve alongside grilled fish or chicken, or alone with a hard boiled egg for a quick lunch.

Briny Scup: This recipe calls for the whole fish, but the preparation will work just as well for filets.

Recipes (ME + NH)

Chicken Parmesan with Spaghetti - One of the most comfy of comfort foods but a nice little lift thanks to the lovely fresh spaghetti most of you are getting.

Garlic Spinach Spaghetti - Want something a bit quicker? And/or vegetarian? This'll get you there.

Fish Curry - Whiting is pretty similar to cod but not quite as flaky which makes it pretty versatile in the cooking methods department. This fish curry would be a great use. And the dish comes together pretty quickly, to boot.

Spicy Tuna Donburi Rice Bowl - Tuna mince is kinda magic. Like ground beef, it's meat left over from butchering that is just as tasty as a steak. Rice bowls are a great use but we also love this...

...Tuna Kofta - From fish sorcerer Josh Niland.

Roasted Apple and Parsnip Soup - Parsnips and apples are best buds. This is super tasty, easy and freezes really well. Serve alongside some bread and butter.

Creamy Mushroom Chicken - Another dish that's like a cozy sweater. Serve alongside some parsnip apple mash, roasted pinto golds or the roasted veg/veggies of your choice.
