Boy oh boy, we're unleashing some beefiness this morning...

We've been buying whole, grass fed cows from our buds Gabe and Molly, owners/operators of Cold Spring Ranch in New Portland, Maine for a couple of years now. And a fresh one just came in last week so we're adding some amazing steaks back to the store.

Just in time for your Labor Day cookout, we've got a fresh batch of filet mignon and New York strip steaks alongside the ribeyes and porterhouses. And we've got a couple whopper New York sirloin steaks. Oh... and Gabe came up out west and has been training his butcher in the art of cutting Santa Maria-style tri-tip so here's your chance to get the real deal. Not familiar? Check this magic out. We love buying whole animals as it's great for the farmer and better for the environment but it's not without its pitfalls. Top of the list? What to do with all the... let's call them "less popular" cuts?

Historically, I (Joe) will plan on nabbing some tongue to smoke, some bones for stock, some suet to make tallow. And I've been promising some liver to our buds Sam and Heather for ages now. CJ, want some kidney for the pooches?

Well, we've got a lot kicking around and we suspect that some of you would be stoked to have access. So, without further adieu, off cuts aplenty! (Psssst... they're also mega affordable.)

Suet - High smoke point and super sweet/savory, rendered into tallow, this stuff is liquid gold in the kitchen, not to mention myriad other household uses.

Marrow Bones - Unctuous, rich beefiness galore when used to make stock, roast hard to step up your ramen broth game, or just roast and enjoy on some crusty bread with sea salt and parsley 🤤.

Oxtail - Braise and serve with its sauce over polenta or take it Haitian with some rice and pikliz.

Heart - Lean with only a touch of gaminess - think venison - this is the most mild of the offal cuts but still intensely beefy, I love it grilled or smoked. Or, as anticuchos like Machu Chicken in Union Sq. used to do (which, by the way, has the best chicken ever).

Liver - I know, I know... not everyone's favorite. BUT. With a little TLC, liver can be pretty amazing. Go classic and lightly fry and serve with caramelized onions, stir fry, or take make it fancy and serve do like the Venetians do.

Kidney - Gotta say, I don't think I've ever had beef kidney but it sounds like you can treat it like liver quite successfully, I'll be buying some to experiment with next weekend.

Last, but not least TONGUE - I think this, along with heart, are two of the most misunderstood, and thus underutilized, cuts of beef. Super tender, super beefy, great texture. Only scary thing is its raw state but if you can get over that, you're sitting pretty. As mentioned, I like to smoke them but I most frequently have them in tacos. If there're lengua tacos to be had, that's what I'm eating.

Aaaaand, now I'm dizzy thinking about weekend cooking projects. We hope this gets your creative juices flowing, too. Take a chance on something a bit weird and reap some beefy benefits.

Recipes

Rajas Tacos - I love poblano peppers. A teeny bit of heat and whole bunch of peppery flavor. Tacos do them justice. And tacos are life.

Caldo Verde - Soup season (and hearty bunched green season) is here. This is the soup I want. (I'd stick with linguiça and not use the hot Italian sausage that most of you are getting here.)

Grilled Sausages With Tomatoes - However I would use those sausages thusly. Doesn't get much more simple and tasty than this.

Black Sea Bass with Polenta and Mushroom Sauce - I'll remind you about this one next time we have polenta in shares 'cause man, oh man is this tasty. (Can someone remind me to remind you?)
