Just Dandy

Good morning friends!

This week we have dandelion greens in all shares from our friends at Clark Farm.

Maybe you're thinking to yourself; "Erin, you write about Clark Organic Farm a LOT in these newsletters. What, are you in loooooooove with Clark Organic Farm? Do you want to maaaaarrry it?".

Maybe I do, maybe I don't. Maybe I slipped Clark Organic farm a note at lunch asking if they wanted to go to prom with me. (No response, it's fine.) That's just none of your business.

Truth is, we have been working with Clark since the beginning. Now thanks for data forecasting are able to do crop planning with them so we can plan a whole season in advance. Good for us, great for the farmers and great for you who get the freshest local produce that was grown just for you.

This week's offering is dandelion greens. These beauties are the belle of ball (or the prima of the prom I'll never go to.) They have a peppery flavor, like arugula that softens when you cook them or blanche them. (Note: to "blanche" means to immerse something quickly in boiling water and then shock it in an ice water bath. It is also the best of the Golden Girls by a country mile.).

Sautee them with garlic. Throw them in a pasta with an unreasonable amount of cheese. I'm going to do this riff on shakshuka and mop the whole glorious thing up with crusty bread and spiffy mug of white wine.

Recipes

Dandelion Greens Dal - Dandelion greens are a bitter treat that play real nice with assertive flavors. Think lots of garlic or, in this case, mustard seeds, cumin, turmeric, a bit of heat... And dal is such a great and simple dish. Cooking lentils till they burst and get all creamy, mixed with flavorful goodies. Yes please.

French-Style Brown Butter New Potatoes - Potatoes are the best vegetable. Objectively. And this buttery treat is irresistible. Super awesome tip I just learned a coupla months back: potatoes are done cooking at around 210º. I now forgo the voodoo of the knife poke in favor of the rational temp taking.

Pan-Roasted Chicken - Were breasts in your share? Cook thusly. Leg and thigh quarters? Here you go.

Samin Nosrat’s Confit Tuna Sandwich - I LOVE this sandwich. It's totally worth taking the time to make aioli (well... my wife made it so it was definitely worth my time, which I surely spent, playing the Spelling Bee). Other relevant things I love:

Samin Nosrat. She's a delight and her book, where this recipe originated, Salt, Fat, Acid, Heat, is constantly open in this household.

Tuna season. We're in the thick of it and this is a great change of pace from seared tuna steaks.

My wife. And not just for hand-making aioli. Although that certainly helps.
