Friends, we are finally here to answer the question that is burning in all of your brains: how the hell is tofu made?

Calm your curious brains, we are here for you.

This week we have certified organic tofu from the good folks at Heiwa in Rockport, Maine. They use local organic soybeans in their process and magically turn it into the vegetarian blocks of deliciousness we deliver to you and offer a la carte in the store!

Owner Jeff Wolovitz works in the production room as the primary tofu maker and does all of the office work. Passionate about small businesses, organic farming, and food production, he has combined them to create Heiwa.

Speaking of creating Heiwa, back to the question at hand. How the heck does this alchemy work?

"Tofu is made by soaking and grinding soybeans to create soy milk, which is then heated and coagulated with a mineral salt (like calcium sulfate or magnesium chloride) to form soy curds. These curds are then pressed in molds to remove excess liquid and shape them into blocks, with the pressure and time determining the final firmness of the tofu."

And while tofu never got the sex appeal at brunch of say an avocado toast, she's still an all star - as comfortable and familiar as your favorite old hoodie.

My favorite way to gussy this up is a spicy peanut tofu which can be turned into tofu bowls and nommed with any of the old veggies kicking around the fridge.
