You guys, before we get into this week's veggie spot light - just want to share two things:

1. And this is VERY important. I don't know if you all have been following Moo Deng, the pygmy hippo from Thailand. And if you haven't been all over this because - maybe you have a job, or friends or hobbies that matter to you - she is an internet sensation with her own IG account, make up line and just dropped her first single. (Please do NOT listen to that song if you have recently been diagnosed with a seizure disorder.)

Not to be outdone Scotland just announced the birth of a pygmy hippo in the Edinburgh zoo they named... wait, yes.... Haggis. Haggis the Hippo is cute as hell and sure to make your day. And while none of this is technically related to food, save for the Scottish hippo named after their National dish - I have included this tidbit because I care about you and your general happiness and we all need a break.

2. Thanksgiving orders are still LIVE. While turkeys are done, we have ADDED a maple cornbread mix from Carolyn's Kitchen. We are also accepting donations for Community Cooks, an organization dedicated to feeding our vulnerable neighbors in need. Both things are sure to make you feel happy and rosy like a wee baby hippo.

LEEKS IN THE HOT SEAT

This week we have leeks from our pals at Clark Farm. Here is a bit more about these guys in the spotlight of your shares:

Leeks are alliums, so they’re related to garlic, chives, shallots, and onions. Make sure to cut them lengthwise and wash to ensure you get all the dirt out of those stubborn layers. And for the love of GOD save the tops to add wonderful flavor to a homemade broth.

Leeks are a little sweet so folks often add them to a fried rice, or a soup to bring that bite of flavor.

I feel like a project of distraction this weekend so I'm all in for a leek risotto that I will prepare in my sweatpants with a glass of wine so big it could double as a koi pond. You could go equally comfy with a slow cooker potato leek soup.

We hope you love it.

Recipes

Homemade Hamburger Helper - From the culinary director of Shake Shack so you know this is not a joke but, instead, one of the tastiest, good for the soul, piles of fat and starch in existence.

Homemade Filet-O-Fish (BAKED!!) - While we're really going for it with that at-home versions, let's throw this into the mix. The pollock is perfect for this and baked = not having to deal with oil (although shallow frying and flipping is still my preference from a crunch perspective). Want a vegetarian version to use with that amazing Tootie's Tempeh. Here ya go.

Fisherman's Roll - Dab is pretty dang popular overseas. Often used for fried fish, we have them right here in the North Atlantic. The link above has everything you ever wanted to know about dab. And it's one of those "recipes" that's not really a recipe at all: "So here it is.. It’s simply 3 or 4 delicate fillets of Dab rolled in a little seasoned white flour and fried in oil (use Olive Oil!) then served in a white bap with plenty of butter and a squeeze of lemon juice! Divine!"
