Some food advice

Good morning friends,

I have been diving head first back into the world of Michael Pollan's writing, this time landing softly into the pages of "In Defense of Food". In its preface Pollan addresses the myriad questions people ask him about what they should eat, how much of it and when. He refuses to bury the lede saying it simply: "Eat Food. Not Too Much. Mostly Plants".

He goes on to say that maybe giving away the answer in postcard form may not be crisp business acumen for a guy trying to sell a 300 page book. But he stands by the summary to the question of what is best for our health.

And I sigh deeply. Though I peddle local veggies as my actual full time job, I dream in technicolor carbs. Fresh pasta, crusty bread with butter (and wine!) and cheese. Mountains of cheese.

I wouldn't say I eat my veggies begrudgingly but sometimes I would rather not bother with intricate presentation. Luckily this time of year there are simply cheat codes that don't require roasted root veggies in the oven for one thousand minutes at 375.

Anything that can be eaten raw I will slice and put into bowls just to have near my desk or on my counter. Cukes, tomatoes, celery.

Anything a little sturdier lives in an olive oil bath over high heat just long enough to wilt, receive the holy water of a lemon squirt and a confetti of flake salt.

It's so often unfancy. Just an attempt to jam veggies into our faces in between the brie and baguettes.

Also, that book is consistently being read alongside a bowl of Cheez-its . For balance. The sweetness of that juxtaposition shows that we all contain multitudes and that any advice people give you about what you should and should not do must be measured alongside what acutally makes you smile.

Recipes

Chef John's Blackberry Buckle - As promised! Probably in my top 5 favorite desserts. Straight forward, kinda ugly delicious, super tasty and so very summery. Also... as I've said before Chef John's YouTube channel, Food Wishes, is amazing and, if you're not familiar, I implore you to check it out. He gives Erin a run for her money when it comes to dad jokes.

Grilled Tuna Steaks - Almost every time we have tuna in shares, I'm posting some version of this recipe. And for good reason. Tuna is in season. It's so damn tasty on its own that KISS (keeping it simple, stupid) is the way to roll. Minimal seasoning, hard sear. Bam.

Burger King Whopper-Style Cheeseburgers - SO GOOD. We have a custom blend of ground beef from grass fed cows raised by our bud Gabe at Cold Spring Ranch. I love doing this recipe. And don't overthink it. First couple rounds I had a timer out, buns prepped, etc. It stressed me out. Don't be like me. Delicious beef, good condiments, you'll be fine.
